What will happen if I will use iPhone offer SIM with non-eligible iPhone device or non-iOS device?

You need to use the SIM in the eligible iPhone device or with an iOS volte compatible device only. In case an iPhone offer activated SIM is used with a non-iOS device or iOS volte incompatible device, then data services will be restricted. However, incoming & outgoing calls and SMS will work seamlessly.
